Halloumi Sandwich

What you need: Bell peppers Zucchini Avocado oil Zaatar Halloumi Bread Hummus Quick pickled red onions Sprouts Avocado

Roast the vegetables at 450F for 15 minutes.

Make quick pickled onion. It takes only a few minutes!

Spread hummus on toasted slices of bread.

Add roasted peppers and zucchini.

Add seared or grilled halloumi.

Add sliced cucumber and quick pickled red onion.

Finish with fresh sprouts and sliced avocado.

Close with the other slice of bread and cut in half to serve.
