Healthy Greek Yogurt Pancakes

What you need: Eggs Greek Yogurt Vanilla extract Gluten-free flour Baking powder Fine sea salt Avocado oil Maple syrup for serving

Whisk together egg yolks, Greek yogurt, vanilla extract, flour, and baking powder.

Add egg whites and sea salt to a large bowl and whip until stiff peaks form.

Gently fold the whipped egg whites into the rest of the batter.

Be careful not to overmix the batter and deflate it. Cook pancakes with avocado oil for approx. 2 mins per side.

Serve with maple syrup, berries, or butter.
