What you need:
Russet potatoes
Avocado oil
Garlic powder
Onion powder
Paprika
Smoked Paprika
Chipotle powder
Dried thyme
Dried oregano
Sea salt

Mix all the seasonings together in a small bowl and set aside.

Peel and dice the potatoes and spread them on a baking sheet. Dry them with a paper towel so that they crisp up better.
