3 Ingredient Banana Oatmeal Pancakes

What you need: Rolled oats Bananas Eggs Vanilla extract (optional) Cinnamon (optional)

Add rolled oats into a blender or a food processor and blend to turn it into coarse flour.

Add ripe bananas to a large bowl and mash using a fork. If they're ripe enough, this should be really easy.

Add eggs to the mashed banana and whisk until well combined.

Add blended oat flour to the eggs and bananas and whisk until just combined. Add vanilla and cinnamon if desired.

Cook the pancakes on a large preheated skillet with butter or oil. Don't overcrowd your pan.

To keep the pancakes warm, keep them in the oven on a baking sheet at 200F while you finish cooking the rest of the batter.

Serve the pancakes with maple syrup, bananas, berries, or any other toppings you enjoy.
