Watermelon Mint Popsicles

Description

Nothing says summer more than these refreshing Watermelon Popsicles! They're incredibly easy to make, so tasty, and much better than store-bought!


Ingredients

  • 5 cups diced watermelon
  • 1/4 cup freshly squeezed lime juice
  • 3 tbsp agave syrup (or honey or simple syrup)
  • 5-6 fresh mint leaves

Instructions

  1. Add the watermelon, lime juice, agave syrup, and mint leaves to a high-speed blender. You can also do this in a food processor.
  2. Blend on high until smooth. You can strain the mixture but I don't find it necessary.
  3. Pour carefully into popsicle molds.
  4. Insert popsicle sticks into each popsicle right away or transfer the popsicles to the freezer and freeze for 30-60 minutes before inserting popsicle sticks to prevent them from moving around. If they freeze on top too much, you can carefully pierce them with a knife to insert the popsicle sticks.
  5. Freeze for 6-8 hours or overnight. 
  6. To take the popsicles out of the molds, run hot water over the molds briefly and pull on the popsicle sticks to get them out. I like to wiggle them gently as I pull them out to avoid them breaking.
  7. Lay the popsicles on a baking sheet lined with parchment paper or in a large freezer bag in a single layer and refreeze. The popsicles might be slightly soft so I like to do this to prevent them from sticking together. Once frozen, keep them in the freezer bag or transfer to a freezer-safe container.

Notes

Storing: Store the popsicles in a freezer bag or a freezer-safe container for 3-6 months.
