Froth your oat milk (optional) and pour it over the ice.
Add sugar cookie syrup.
Brew two shots of espresso and pour them over the milk.
Top the latte with whipped cream and sprinkles if desired and enjoy!
Notes
You can use store-bought syrup like Monin but I highly recommend making your own for the best flavor.
Sugar cookie syrup: Simmer 1 cup sugar with 1 cup water for 10 minutes. Take it off the heat and stir in 1 tbsp vanilla extract, 1 tsp butter extract, and ½ tsp almond extract.
Hot latte: You can also make a hot version of this latte by skipping the ice and warming up your oat milk.
