Roasted Red Pepper Feta Dip

Description

This feta dip comes together in a few minutes and it's always a big hit! Serve it as a dip, in sandwiches, with meat, fish, or veggies!


Ingredients

Units Scale
  • 200g feta cheese
  • 100g soft goat cheese (or cream cheese)
  • 1 clove garlic, grated
  • 2 medium roasted red peppers
  • 1/4 tsp coarsely ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp chili flakes (add more or less based on your preference)
  • 1 tbsp extra virgin olive oil
  • Zest of half a lemon
  • 1 tbsp lemon juice (or more to taste)
  • 1/2 tsp ground sumac (optional)
  • Garnish (optional): ground sumac, toasted pine nuts, spring onion (green part only)

Instructions

  1. Add all ingredients into a food processor and process until smooth. You might need to scrape down the slides a couple of times.
  2. Add more pepper, lemon juice, or herbs to taste. 
  3. Serve as a dip garnished with sumac, pine nuts, and spring onion or add it to sandwiches, burgers, and wraps, or serve it with roasted vegetables, meat, or fish.

Notes

Feta: To avoid the dip being too salty, rinse your feta cheese under cold water briefly before adding it to the food processor. This will remove any excess salt on it from the brine.
