Description

This Pineapple Jalapeno Margarita is the perfect combination of sweet and spicy and a great summer cocktail!

Ingredients

Units Scale
  • Glass prep: 1 tsp agave syrup + 1 tbsp tajin
  • Ice
  • 1 1/2 oz tequila (blanco or reposado)
  • 1/2 oz Cointreau (or other orange liqueur)
  • 1/2 oz simple syrup (or 1/4 oz agave syrup)
  • 1 oz freshly squeezed lime juice
  • 2 1/2 oz pineapple juice
  • 1-2 slices of jalapeno (seeds removed)*
  • Garnish: lime slice, jalapeno slice, pineapple wedge, pineapple leaves

Instructions

  1. To prep your glass, brush the rim of the glass with agave syrup and dip it in tajin. Fill the glass with ice and set it aside.
  2. Into a cocktail shaker add tequila, Cointreau, simple syrup or agave syrup, lime juice, pineapple juice, and 1 jalapeno slice.
  3. Add a handful of ice and shake vigorously for a few seconds.
  4. Strain the margarita into your prepared glass and garnish with a lime wedge, a lime slice, a jalapeno slice, or a pineapple wedge and pineapple leaves if desired. Enjoy!

Notes

Jalapenos: To make it spicier, add 2 or 3 slices for an extra spicy margarita.

Pitcher version: Multiply the ingredients by however many servings you need and add everything to a large pitcher. Remove the seeds of 1 fresh jalapeño and slice it up. Add it to the pitcher and let that sit for a couple of minutes. Taste it, and fish out the jalapeños with a fork if it's strong enough. Serve over ice and enjoy! You can also leave it in the fridge for a couple of hours before your guests arrive (without the jalapeño).
