Kiwi Mojito

This Kiwi Mojito is a fun spin on the classic cocktail and the perfect summer drink! You only need 5 ingredients and 5 minutes to make it. It's so refreshing and can easily be made into a mocktail.

Ingredients

  • 1 kiwi
  • 1 lime
  • 10-15 fresh mint leaves (a small handful) plus more for garnish
  • 1 tsp agave or maple syrup or more to taste (optional)
  • 2 oz white rum
  • Ice cubes or crushed ice
  • Sparkling water (I used sugar-free lime flavor)

Instructions

  1. Reserve a slice or two of each of the kiwi and the lime for garnish. Peel the rest of the kiwi and roughly chop it. Cut the lime into thick rounds and into quarters.
  2. Add both to a tall glass along with the fresh mint leaves and agave or maple syrup if using. Muddle using a muddler or the back of a wooden spoon.
  3. Pour in the white rum and mix using a long spoon.
  4. Fill the glass with the ice cubes or crushed ice and add the reserved slice of kiwi and lime.
  5. Top up with the sparkling water and serve with a straw if desired.

Notes

I don’t peel the kiwi slice I reserve for garnish but I recommend peeling the rest of it that you’re going to muddle. Peeling the lime isn’t necessary.

If you want your cocktail to be clear, you could do the mixing and muddling in a cocktail shaker without the sparkling water, pour it over ice, and then top up with the sparkling water. I prefer doing it in a glass because the kiwi gets mushy once you muddle it and it might make it hard to pour all the liquid out of the cocktail shaker.
