Description

This Greek Yogurt Oatmeal is extra creamy, simple, and high in protein! Greek yogurt makes it light, creamy, and more filling! You only need 6 ingredients and about 10 minutes to make it! This oatmeal is also naturally gluten-free and easy to make vegan!


Ingredients

  • 1 cup milk (plus more as needed, I use cashew or almond milk)
  • 1/2 cup rolled oats
  • 1/4 cup full-fat Greek yogurt
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1-2 tsp honey or maple syrup
  • Berries, hemp seeds, and more honey for serving

Instructions

  1. Add milk and rolled oats to a small saucepan and bring them to a boil.
  2. Lower the heat and simmer the oats for 5-8 minutes or until creamy, adding more milk or water if needed. Stir often to prevent the oats from sticking to the bottom.
  3. Once creamy, turn the heat off, and stir in Greek yogurt, cinnamon, vanilla extract, and honey or maple syrup. If the yogurt cooled down the oats too much, turn the stove back on for a minute.
  4. Serve the oatmeal topped with berries, a sprinkle of hemp seeds, and a drizzle of honey. Enjoy!

Notes

Storing: Oatmeal is best enjoyed right away, but you can store it in an airtight container in the fridge for 1-2 days if you need to. Wait for it to cool before closing it with a lid.

Reheating: If you do store it, I recommend reheating it in a saucepan on the stove. Add a splash of milk or water to make it creamy again and prevent it from sticking. You can also reheat it in the microwave.
