Chocolate Cherry Baked Oatmeal

This Chocolate Cherry Baked Oatmeal is an easy make-ahead breakfast that tastes like a dessert! It's perfect for a large family or for meal prep. It's naturally gluten-free and made with chocolate chips and fresh or frozen cherries. Baked oats are very freezer-friendly and always delicious reheated!

Ingredients

  • 2 cups rolled oats
  • 2 tbsp cacao powder
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1/4 tsp fine sea salt
  • 3 tbsp melted unsalted butter (plus a knob of butter for greasing the baking dish)
  • 2 cups almond milk (or other milk)
  • 2 cups pitted cherries, roughly chopped (plus more for garnish)
  • 1/4-1/2 cup chocolate chips
  • 1 tbsp turbinado sugar (optional)

Instructions

  1. Preheat your oven to 375F and prepare a 12x8-inch baking dish.
  2. In a medium bowl, stir together rolled oats, cacao powder, baking powder, and cinnamon. Set aside.
  3. In a large bowl, whisk together eggs, maple syrup, vanilla extract, almond extract, fine sea salt, and melted (and cooled) butter until well mixed.
  4. Pour in milk and whisk to combine.
  5. Add the dry ingredients and stir with a spoon.
  6. Add pitted chopped cherries and chocolate chips. Stir again to incorporate.
  7. Grease your baking dish with a knob of butter and pour the batter into it. Spread it out evenly to avoid the cherries and chocolate piling up in the middle.
  8. Sprinkle with turbinado sugar if desired.
  9. Bake in the preheated oven for 45-50 minutes.
  10. Remove from the oven and let it cool in the pan for at least 5 minutes before slicing. A thin metal spatula works best to remove the oatmeal from the pan.
  11. Serve on its own or with yogurt, fresh berries, or more cherries. Enjoy!

Notes

Storing: Store any leftovers in an airtight container in the fridge for 3-4 days. You can also freeze the oatmeal in a freezer-safe container for 2-4 months. Place a piece of parchment paper between slices to avoid them sticking together in both the fridge and the freezer.

Reheating: Reheat the oats on a small baking sheet in a preheated oven at 300F for 5-10 minutes from the fridge or longer from the freezer. I recommend letting the oatmeal thaw in the fridge overnight first, or at room temperature for 15 minutes before reheating.
