Cherry Chia Pudding

This Cherry Chia Seed Pudding is extra creamy, vegan, and has a true, fresh cherry flavor. It has 8 simple ingredients and takes just 10 minutes to make. It's the perfect summer breakfast for busy mornings and meal prep! Plus, it doubles as a snack!

Ingredients

  • 1 cup yogurt (I like plain Yoggu)
  • 1/2 cup milk
  • 2 tbsp maple syrup (or other sweetener)
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp ground cinnamon
  • 1/4 cup chia seeds
  • 1 cup halved pitted cherries (fresh or frozen)

Instructions

  1. To a medium bowl, add yogurt, milk, maple syrup, vanilla extract, almond extract, cinnamon, and chia seeds.
  2. Whisk until well mixed.
  3. Stir in the cherries.
  4. Let the mixture sit for 5-10 minutes and stir again to get rid of any clumps.
  5. Cover or divide into two jars and chill in the fridge overnight or for at least 4 hours.
  6. Serve with fresh berries, yogurt, or almond butter, and enjoy!

Notes

Storing: Store the chia pudding in an airtight container in the fridge for 3-4 days. I don’t recommend freezing it.
