Description

Basic gluten-free waffles sweetened with a touch of maple syrup and cinnamon. Perfect for a Sunday brunch served with fresh berries.


Ingredients

  • 3/4 cup brown rice flour*
  • 1/3 cup chickpea flour*
  • 1/4 cup tapioca flour*
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 tsp cinnamon
  • 3 eggs
  • 2 tbsp avocado oil (sub melted coconut oil or other cooking oil)
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup (plus more for serving)

Instructions

  1. In a big bowl, combine all the dry ingredients and set aside.
  2. In a separate bowl, beat the eggs, add the avocado oil, almond milk, vanilla extract, maple syrup.
  3. Slowly pour the wet ingredients into the wet and whisk until there are no lumps.
  4. Set aside for 5-10 mins while you heat up the waffle iron.
  5. Once it's hot, spray it with a bit of avocado oil if needed and ladle in the batter leaving space around the edges so the waffles have space to expand.
  6. Cook for 3-4 mins or based on how hot your waffle iron gets. I set mine to medium-low so the waffles don't burn.
  7. Keep your waffles on a baking sheet in the oven or on a plate covered with a bigger one to keep them warm.
  8. Serve immediately or freeze.

Notes

* If you want to use a GF flour mix, you can skip the brown rice, chickpea, and tapioca flours and use 1 cup + 1 tbsp gluten-free flour mix instead. I tried one and it worked great. Every mix is different, though, so success isn't 100% guaranteed.

You can preheat your oven to 200F (100C) to keep the waffles warm while you finish cooking the rest of the batter. 

These freeze really well, just pop them in the toaster when ready to eat!
