Apricot Chia Jam

This Apricot Chia Jam has just 4 simple ingredients and takes less than 30 minutes of hands-on work! It's sweet, tangy, and perfect for the summer. You can spread it on toast with butter, add it to your oatmeal or yogurt, top your pancakes with it, or just eat it with a spoon!

Ingredients

  • 2 cups pitted and diced fresh apricots (10-12 apricots, depending on size)
  • 1/4 cup water
  • 2-4 tbsp maple syrup or honey
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract (optional)
  • 2 tbsp chia seeds

Instructions

  1. Add the diced apricots, water, and maple syrup or your sweetener of choice to a medium saucepan. Bring the mixture to a soft boil, stirring often.
  2. Lower the heat and simmer on medium-low for 15 minutes, stirring occasionally. The apricots should start falling apart almost immediately. If yours aren’t as ripe, this might take longer. You can help it along using the back of a fork to smush them.
  3. Take the mixture off the heat and stir in lemon juice, vanilla extract (if using), and chia seeds.
  4. Allow the mixture to sit and cool for 5 minutes, and stir again.
  5. Transfer the jam to a glass jar or a container. Let it cool to room temperature, then close it with a lid, and store it in the fridge.

Notes

Apricots: You can use both fresh and frozen apricots. Just defrost them before using. Do not use dried apricots for this recipe.

Storing: Store the chia jam in an airtight container in the fridge for up to 5 days. You can also freeze it in a freezer-safe container for 2-3 months.
