Apple Pie Baked Oatmeal

Description

This Apple Pie Baked Oatmeal is the perfect make-ahead breakfast for fall and winter! It's simple, comforting, great for meal prep, and freezer-friendly!


Ingredients

  • A knob of butter (for greasing the pan)
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tbsp apple pie spice
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup almond butter (optional)
  • 1 tbsp vanilla extract
  • 1/4 cup melted butter (or avocado oil)
  • 2 cups almond milk (or regular milk)
  • 1/4 tsp fine sea salt
  • 1 apple, grated (1 cup)
  • 2 apples, diced (2 cups)
  • 2-3 tbsp turbinado sugar (optional)

Instructions

  1. Preheat your oven to 375F (190C). Prepare a 12x8-inch baking dish and grease it using a knob of butter. Set aside.
  2. In a medium bowl, whisk together rolled oats, baking powder, and apple pie spice. Set aside.
  3. In a large mixing bowl, whisk together eggs, maple syrup, almond butter (if using), vanilla extract, and melted butter.
  4. Add milk and whisk again.
  5. Add the dry ingredients and whisk to combine.
  6. Add grated apple, and diced apples and stir with a spoon to combine.
  7. Pour the batter into your prepared baking dish and sprinkle with turbinado sugar if desired.
  8. Bake in the oven for 45-50 minutes until golden.
  9. Take out of the oven and allow to rest for a few minutes. 
  10. Slice the baked oatmeal into 6 squares and serve with your favorite toppings. Enjoy!

Notes

Fridge: Store any leftovers in an airtight container in the fridge for 4-5 days. 

Freezer: Freeze pre-portioned baked oatmeal in a freezer-safe container for 2-4 months.

Recommended baking dish: I like using a 12x8-inch (20x30cm) glass baking dish. The oatmeal has more surface to crisp up in a larger pan but it’s still thick enough to be soft on the inside. If you use a different size pan, the results and cooking time may vary.
