Pineapple Pico de Gallo

What you need: Pineapple Roma tomatoes Fresh cilantro Red onion Jalapeno Lime Sea salt, pepper Tajin (optional)

Peel and finely chop the pineapple (see blog post for extra tips on how to do this).

Add chopped pineapple, roma tomatoes, red onion, jalapeno, and fresh cilantro to a large bowl. Toss to combine.

Drizzle everything with lime juice and season with salt and pepper, and tajin if desired.

Serve the fresh salsa with tortilla chips or in tacos, burritos, or as a side with protein.
