Zucchini Fritters with Garlic and Marjoram

What you need: Zucchini Eggs Garlic Dried marjoram Dried oregano Red onion Chickpea flour Baking powder

Grate the zucchinis and sprinkle with salt to draw out the water.

Squeeze out as much excess water as you can out of the grated zucchini.

Mix the zucchini with the flour, baking powder, onion, garlic, dried herbs, sea salt, and pepper.

Cook the zucchini fritters with avocado oil for 2-3 minutes on each side.

Serve with a dollop of sour cream and quick pickled red onion. Great on their own or as a side.
