Vegan Potato Leek Soup with Lentils

What you need: Oil and butter Leeks Celery Caraway seeds Oregano Marjoram Potatoes Bay leaves Lentils Red pepper flakes Sea salt

Sauté leeks, celery, and caraway seeds with oil and butter. Add potatoes, bay leaves, and water.

Bring the soup to a boil and simmer for 30 minutes. Cook the lentils while the soup is cooking if not using precooked.

Discard the bay leaves and blend about half of the soup to thicken it. Add in the lentils.

Serve garnished with more lentils, chili flakes, and herbs.
