Vegan Green Pea Soup

What you need: Oil Onion Garlic Vegetable Stock Frozen Peas Fresh herbs Salt and Pepper Chili Flakes Lemon Cashew milk

Sautee onion until slightly caramelized and add garlic and chili flakes.

Deglaze the pan with a splash of vegetable stock.

Add frozen peas and the rest of the stock. Bring to a boil and cook for 5 minutes.

Add the cooked peas and stock to a blender with herbs and blend until smooth.

Add lemon, salt, pepper, or more chili flakes to taste.

Add the soup back to the pot, stir in the cashew milk until desired consistency is reached.

Serve hot with creme fraiche or vegan sour cream. Full recipe linked below!
