Sweet Potato Kale Salad with Sun-dried Tomatoes
What you need: Kale Sweet potatoes Cucumber Red onion Sun-dried tomatoes Soft goat cheese Olive oil Lemon Fresh herbs
Peel and dice your sweet potatoes, drizzle with oil and season with dried herbs, and garlic powder.
Roast at 400F for 40 minutes tossing once.
Remove stems from kale and shred the leaves (finely chop).
Add a splash of olive oil and a pinch of sea salt and massage it until it's dark green and softer.
Add all the ingredients except the dressing into a large bowl and toss.
Toss with dressing and serve with extra on the side.
