Spicy Miso Roasted Eggplant

What you need: Eggplant Tamari Sesame oil Maple syrup Rice vinegar Miso paste Chili garlic sauce Garlic powder Parsley Sesame seeds

Preheat your oven to 425F. Mix sesame oil, tamari, maple syrup, miso, chili garlic sauce, rice vinegar, and garlic powder. Drizzle over egglant and toss to coat well.

Roast the eggplant in the preheated oven for 40-50 minutes or until soft. Toss 1-2 times throughout roasting.

Serve the eggplant with rice, fresh parsley, toasted sesame seeds, and hummus, or other toppings and protein if desired.
