Roasted Cauliflower Lentil Salad
What you need: Cauliflower Spices Lentils Onion Sun-dried tomatoes Parsley Lemon Olive oil Sherry vinegar
Cut the cauliflower into florets. Drizzle with oil and season with chili, paprika, cumin, garlic, parsley, thyme, and oregano.
Preheat the oven to 400F and roast the cauliflower for 20 minutes, toss, and roast for 20 more.
Add cooked lentils, chopped parsley, and cherry tomatoes and toss. Drizzle with olive oil, sherry vinegar, and lemon juice.
Serve by itself as a hot side or cold with lettuce, tomatoes, cucumbers, or any other of your favorite veggies.
