Pesto Orzo with Lemon Garlic Shrimp

What you need: Raw shrimp Avocado oil Sea salt Pepper Garlic powder Lemon zest Shallots Orzo Vegetable stock Lemon juice Fresh parsley Pecorino

Toss shrimp with oil, sea salt, pepper, garlic powder, and lemon zest.

Cook the shrimp in a single layer for 2 minutes per side. Add minced garlic towards the end.

Add chopped shallot, more oil, and cook for 2 minutes.

Add dry orzo and toast for a minute.

Slowly pour in vegetable stock and scrape flavor bits stuck to the bottom.

Simmer orzo for 10 minutes or until soft while stirring often.

Stir in pesto, a squeeze of lemon juice, and more salt and pepper if needed.

Add the shrimp back in, sprinkle with fresh parsley and serve with a sprinkle of pecorino.
