Mediterranean Potatoes

What you need: Lemon juice Extra virgin olive oil Vegetable broth Garlic Dried oregano Dried parsley Dried rosemary Paprika powder Sea salt & pepper Potatoes

In a jar, mix together lemon juice, olive oil, broth, garlic, herbs, paprika, sea salt, and pepper.

Peel your potatoes, slice them into wedges and lay out in a baking dish.

Pour the sauce evenly over the potatoes.

Cover the baking dish with foil and roast the potatoes in the oven for 40 minutes.

Remove the foil and roast the potatoes for 30 more minutes to crisp them up.

Serve the potatoes garnished with fresh parsley and lemon slices.
