Mango Quinoa Salad with Chipotle Dressing

What you need: Olive oil Lime juice Honey Dijon mustard Cumin and chipotle p. Quinoa Black Beans Mangos Bell peppers Cherry tomatoes Red onion Black beans Avocado Cilantro Jalapeno Feta Pumpkin seeds

Mix together olive oil, lime juice, honey, dijon, cumin, chipotle, and sea salt. Set aside.

Add all the veggies, quinoa, beans, herbs, and feta to a large bowl, and drizzle with the dressing.

Add roasted pumpkin seeds right before serving to keep them crunchy.

Serve with more avocado and an extra sprinkle of pumpkin seeds and chipotle powder.
