What you need:
Bell peppers
Eggplant
Zucchini
Red onion
Dried oregano
Sea salt, pepper

Preheat your oven to 400F. Add chopped vegetebles to a baking sheet. Drizzle with oil and season with oregano, salt, and pepper. Toss.

Roast the vegetables for 45-50 mins. Toss 2-3 times.
