Halloumi Orzo Bowl with Roasted Vegetables

What you need: Bell peppers Eggplant Zucchini Red onion Dried oregano Sea salt, pepper Avocado oil Yogurt Fresh herbs Garlic Olive oil Honey Lemon Orzo Halloumi

Preheat your oven to 400F. Add chopped vegetebles to a baking sheet. Drizzle with oil and season with oregano, salt, and pepper. Toss.

Roast the vegetables for 45-50 mins. Toss 2-3 times.

Make yogurt sauce - In a medium bowl, mix yogurt, dill, mint, garlic, olive oil, honey, lemon zest, lemon juice, sea salt, pepper.

Cook orzo for 14-16 minutes. Drain and rinse. Pan-fry halloumi on a skillet for a couple minutes on each side.

Serve the orzo in a bowl topped with roasted veggies, crispy halloumi, and yogurt sauce.
