Green Pasta Sauce

What you need: Baby spinach Plant-based milk Vegetable stock Garlic Basil Tapioca starch Red pepper flakes Salt and pepper Spaghetti Lemon juice Pecorino cheese

Add all sauce ingredients into high-speed blender.

Blend on high until smooth.

Sautee finely chopped onion and garlic.

Add the blended sauce and simmer gently to thicken.

Stir in pecorino cheese or nutritional yeast to keep the sauce vegan.

Boil the spaghetti, drain and rinse, and toss with the sauce. Add pasta water if needed.

Finish with fresh lemon juice and and more salt or pepper if needed.

Serve with a lemon wedge and garnish with fresh basil. Full recipe linked below!
