Delicata Squash Kale Salad with Fig Vinaigrette

What you need: Extra virgin olive oil Balsamic Vinegar Fig preserves Sea salt Pumpkin seeds Avocado oil Maple syrup Smoked paprika Red pepper flakes Delicata squash Thyme Cherry tomatoes Red onion Baby kale Soft goat cheese

Make the dressing by mixing together olive oil, balsamic vinegar, fig preserves, and sea salt.

Toss pumpkin seeds with avocado oil, maple syrup, sea salt, smoked paprika, red pepper flakes, and roast at 350F for 8-10 minutes.

Roast the delicata squash with avocado oil, thyme, salt, pepper at 425F for 30 minutes.

Toss together cherry tomatoes, red onion, and baby kale with the dressing. Top with goat cheese, roasted squash, and pumpkin seeds.
