Cream of Broccoli Soup with Broccoli Croutons

What you need: Avocado oil Onion Leek Carrot Celery Potatoes Broccoli Bay leaves Garlic Milk or cream (optional) Garlic powder Pecorino Sea salt

Cook onion and leek with avocado oil in a large pot for 5-7 minutes.

Add carrots, celery and cook for 2-3 more mins. Add potatoes, broccoli, and bay leaves. Cover with water and bring to a boil.

Simmer the soup for 30 minutes. Use a handheld or regular blender to blend the soup until smooth.

Roast broccoli with avocado oil, salt, pepper, and garlic powder at 450F for 10 minutes. Add pecorino and roast for 5 more minutes.

Serve the soup with crispy broccoli on top and enjoy immediately.
