Coconut Rice

What you need: Basmati rice Water Coconut milk Sea salt Lime juice Lime zest Fresh herbs (optional)

Rinse the rice thoroughly before cooking. This prevents it from sticking together.

When the water runs clear, add the rice into a small pot with water, coconut milk, and sea salt.

Simmer the rice for about 12 minutes until all liquid is absorbed.

Fluff with a fork, add lime juice, lime zest, and fresh herbs if desired. Cover and allow rest for 10 minutes.

Serve garnished with lime slices and more lime zest if desired.
