Chickpea Egg Salad Sandwich

What you need: Eggs Chickpeas Red onion Celery Pickles Fresh dill and chives Greek yogurt Dijon mustard Hot sauce Garlic powder Salt and pepper Lemon

Cook eggs for 8 minutes and let cool. While they're cooking mash chickpeas in a large bowl.

Add red onion, celery, pickles, dill, chives, hot sauce, and salt and pepper.

Mix everything together and add Greek yogurt and dijon mustard. Mix again.

Peel and chop the boiled eggs. I like using an egg slicer for even pieces. Gently mix.

Serve the salad in a sandwich with shredded lettuce and extra pickles.
