Carrot Cake Baked Oatmeal

What you need: Rolled oats Baking powder Spices Eggs Avocado oil Honey Vanilla extract Sea salt Lemon zest Almond milk Carrots Apples Raisins Walnuts  Turbinado sugar

Mix together the oats, baking powder, and spices and set aside.

Whisk the eggs, avocado oil, honey, vanilla, sea salt, and lemon zest together.

Whisk in almond milk and mix in the rolled oats and spices.

Stir in grated carrots, apples, chopped walnuts, and raisins.

Transfer the batter to a baking dish and sprinkle with turbinado sugar for extra crunch and sweetness.

Bake for 45-50 minutes until golden brown.

Serve with yogurt, berries, figs, or other toppings of your choice.
