Bell Pepper and Zucchini Breakfast Skillet

What you need: Leek Zucchini Bell Pepper Jalapeno Avocado oil Garlic Tamari Za'atar spice Eggs Sundried tomatoes Cheddar

Sautee the leek with avocado oil. Add the bell pepper, zucchini, and jalapeno and sautee until soft.

Make 3-4 little nests in the vegetables and crack the eggs into them. Sprinkle sundried tomatoes around the eggs.

Sprinkle everything with za'atar and cook for 10 minutes. Sprinkle with cheddar and cook for 2 more minutes.

Serve immediately with toasted bread, sausages, bacon, or anything else.
