A few months ago I finally bought myself a waffle maker and I've been obsessed with ever since! You could call it a quarantine boredom activity but I'd actually wanted to get a waffle maker for years. I'm so happy I finally did! I got the Belgian Waffle with Pancakes plates by Cuisinart and I really like it. I haven't used the pancake attachment yet, but the waffle attachment is great. This isn't sponsored or an affiliate link, it's just a fairly affordable waffle maker I really like.
I still eat my usual oatmeal for breakfast on most days, don't get me wrong. From time to time, though, I really like to make delicious waffles for breakfast. That being said, for someone so obsessed with waffles, I haven't shared many recipe recipes with you yet but I'm about to change that. I actually have more waffle recipes on the way!

These Gluten-Free Apple Butter Waffles I'm sharing today are specifically great for fall and winter because of the apples and apple pie spice I'm adding to the batter.
What is Apple Butter?
A couple of weeks ago, I shared Apple Cider Pancakes but I've never shared any recipes using apple butter. I'm fairly new to apple butter, actually. I tried it for the first time this fall and I was immediatelly hooked.
Apple butter is thick cooked down apple sauce. You can make homemade apple butter yourself and it's actually pretty easy. You basically peel some apples, cook them until soft, blend them into apple sauce, and cook that until thick and buttery. It's a fairly long process so I've always used store-bought apple butter. If you want to make it at home, though, more power to you! Homemade is always the best. If you're buying it, check the ingredients and make sure there's nothing but apples in the jar. You can use it in recipes like pancakes or waffles, or just spread it on toast or top these waffles with it! Apple butter is also delicious in drinks and cocktails. Try adding a teaspoon to this Spiced Rum Apple Cider Cocktail for extra apple flavor.
How to serve these Apple Butter Waffles:
There are endless possibilities of what to top these waffles with. In the photos, I topped the waffles with my Orange Maple Cranberry Sauce, sliced apple, chopped walnuts, dried cranberries, and maple syrup. You can add apple butter, stewed apples, homemade Chia Jam, nut or seed butter, and any toasted or raw nuts. These waffles would also be really good with caramelized bananas or apples.

Description
Delicious apple butter waffles - the perfect breakfast for fall or winter! Serve with fresh or stewed apples and maple syrup.
Ingredients
- 1 cup all-purpose gluten-free flour*
- 2 tbsp coconut sugar
- 1 Tsp baking powder
- ¼ Tsp fine sea salt
- 1 Tsp Apple pie spice
- 1 Tsp cinnamon
- 2 eggs
- ¼ cup apple butter (sub applesauce if you don’t have apple butter)
- ⅔ apple cider
- 2 tbsp melted butter (or oil)
- Avocado oil for cooking
Instructions
- In a large bowl, mix together the flour, coconut sugar, baking powder, fine sea salt, apple pie spice, cinnamon, and set aside.
- In a smaller bowl, whisk the eggs, add the apple butter, apple cider and stir to combine. If the mixture is too cold, save the butter and whisk it into the batter at the very end. Pour the wet mixture into the dry mix and whisk until combined. Don’t over whisk. Lastly, pour in the butter if you didn’t add it to the wet mix, and quickly whisk.
- Heat up the waffle iron. Spray with a little bit of avocado oil or use a brush if you don’t have a spray. Pour in about half the batter (or enough to cover about ¾ of your waffle iron, this depends on how big it is) and cook for 2-3 minutes or follow the waffle iron instructions.
- Serve with apples, maple syrup, yogurt, or berries. Enjoy!
Notes
*If you don’t have a gluten-free flour mix, my favorite flours to mix here are chickpea, brown rice, and tapioca. Use ½ cup brown rice flour, ¼ cup chickpea flour, and ¼ cup tapioca flour.
