Description

These Gingerbread Overnight Oats are creamy, easy to make, and homemade Christmas spice makes them extra delicious! They're great for meal prep, and the recipe comes together in just a few minutes!


Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds (optional)
  • 2 tsp cacao powder
  • 1/2 tsp Christmas spice (or gingerbread spice)
  • 2 tsp ground flax seed (optional)
  • A small pinch of fine sea salt
  • 3/4 cup almond milk or other milk (add more if you like your oats thinner)
  • 1 tbsp maple syrup or honey
  • 1 tsp molasses (optional)
  • 1/4 tsp vanilla extract

Instructions

  1. In a mason jar or a bowl, mix together rolled oats, chia seeds (optional), cacao powder, Christmas spice, ground flaxseed (optional), and a small pinch of sea salt.
  2. Whisk in the milk, maple syrup, molasses (optional), and vanilla extract.
  3. Cover and allow to soak in the fridge overnight or for at least 5 hours.
  4. Stir again before serving and enjoy with your favorite toppings!

Notes

Topping ideas: Nut butter, yogurt, Gingerbread Granola, mini Gingerbread Cookies, fresh berries, or caramelized apples.

Storing: Store them in an airtight container in the fridge for up to 3 days. They may last for up to 5 days but in general, I like to eat any overnight oats within 3 days because as their texture degrades, they sit, this is especially true if you add fruit. The oats get softer and softer, and they won’t taste as fresh past the 3 day mark.
